I love food. I cook. And I built Cocina 1885 around one thing done right: authentic Spanish paella, cooked fresh in Manila.
Racing taught me process. Culinary school at De La Salle–College of Saint Benilde taught me craft. Cocina 1885 is where those meet — heat, timing, and ingredients that earn their place in the pan.
